EASIEST Vegan Chili

THE easiest and best chili EVER.

seriously, this stuff was AWESOME. i had one bowl, brian had three. and then he wanted a fourth “for dessert” (his words, not mine.) it was ridiculously easy to make aaannd completely vegetarian (and vegan, might i add.)


4 cans of beans (we used a can of each garbanzo, black, kidney, pinto)

2 28oz cans of canned tomatoes

4oz can of green chili peppers

1 onion, chopped

2 small zucchini, cut lengthwise, then halfwise in small slices

2 tbsp chilli powder

1 tsp ground cumin

1/2 tsp garlic powder

put everything into big pot. let boil, reduce heat, cover, and let cook for 35 minutes. DONE! i served it over a small sweet potato (you can’t see it, but its at the bottom of the bowl, under the chili), and it was delicious.

seriously, everyone make this!

note: this recipe yields a ALOT of chili. you were warned.
