Sarah’s Red Pepper Sauce

this is a recipe from sarah, who knows a thing or two about the kitchen. this is a really easy sauce to make (although it will require a lot of chopping) and we served it over whole wheat spaghetti. you could also put it over some sort of fish, or even chicken, if your heart so desires.

4 red, unblemished sweet red peppers,
1 or 2 onions,
1/4 cup olive oil,
1 tbs. finely chopped garlic,
1/4 tsp. dried, hot red pepper flakes,
1 1/3 cups veggie broth,
3 tbs. tomato paste,
3 tbs. chopped sundried tomatoes,
salt and pepper,
fresh basil.

cut peppers in half, discard core, veins and seeds.
Coarsely chop peppers…. should be about 4 cups.
Coarsely chop onion, about 4 cups.
heat oil in deep skillt, add peppers. Cook, stirring about 5 min.
Add onions, garlic, red pepper flakes and cook, stirring often about 2 min.
Add broth, sun-dried tomatoes, tomato paste, salt and pepper. Cover and cook about 15 min.
Pour mixture into food processor, and blend thoroughly.
Pour mixture into saucepan and bring to boil.
Let cook about 2 minutes. Stir in basil, serve with pasta.
