these were really easy to make and tasted AMAZING.
one head of cauliflower
soy milk (plain)
one clove of garlic
tbsp of earth balance
first, i steamed the cauliflower. i divided the head of cauli into about 5 or 6 pieces, and then put them in a saucepan with about an inch of water. the water boiled, i left the cauli in and covered it. 5-10 minutes later? steamed caul!
i then food processed the cauli, garlic, and thyme together. added salt and pepper and soy milk (as needed….soy milk is totally optional for this but i found it made the final product a little smoother/creamier.
the final product was REALLY good. a way healthier option than regular mashed ps. next time i’m going to try adding some pinenuts, or maybe rosemary…..make these!
