i make this side dish ALL THE TIME, and tonight brian said this was “the best one i’ve ever made”, so i figured it was worth posting. i didn’t really do anything all THAT different, except i kept the chunks pretty big, and didn’t bake them as long as i usually do.
one butternut squash
olive oil/PAM/olive oil spray
pretty simple. Use olive oil/PAM/olive oil spray to lightly grease a baking sheet, put squash on, put salt, pepper and top with a final layer of PAM/OO spray. put in the oven at 400 degrees for 40-50 minutes. these were perfect: a little crispy on the outside, but super soft on the inside. mmmmm.
