these combine two of my favorite things in the world: avocado and black beans.
in these wraps (aside from the lettuce):
what you need:
black beans (can of black beans, chopped red onion,chopped green pepper, one clove of garlic, salt and pepper to taste)
guacamole (chopped red onion, chopped on the vine tomato, juice of half a lime, one clove of garlic, 1/4 of a jalapeno, one whole avocado)
grilled peppers + onions (salt, pepper, red chilli flakes)
chopped cherry tomatoes
what you do:
guacamole: this is pretty self explanatory. after mashing the whole avocado in a small bowl, add everything else in (season and tasted as you go!) and ENJOY.
black beans: we improvised these and they came out amazing. throw the above ingredients into a pot, cover on low heat and let simmer for about 20 minutes.
griller peppers + onions: this was pretty easy too. put these in a skillet over medium heat with a little bit of oo. add salt, pepper and red chili pepper flakes and let the veggies get really, really cooked….burnt, if you will. they had that delicious charred taste to them and they went perfectly with everything else.
