tonight i was in a lazy mood, so instead of whipping something crazy up i decided to use a bunch of the stuff in my fridge that was about to go bad….namely, the veggies. i came up with this veggie quinoa that was easy to make, filling and healthy. win win WIN.
what you need (4 servings):
1 cup of quinoa (uncooked)
2 cups of water
1/2 cup of cooked lentils
1/2 cup of lentils
1/2 a small red onion, coarsely chopped
1/2 of a red pepper, coarsely chopped
two stalks of celery, chopped
1/2 an avocado, cut how ever you’d like (i cut into inch sized pieces)
1/2 of a sweet potato (all i had handy, but you could definitely use more!)
1/2 the juice of a lemon
few splashes of soy sauce/tamari
garlic powder (or you could use fresh garlic, diced — all i had was the powder.)
what you do:
put a cup of uncooked quinoa in a sauce pan with 2 cups of water. bring to a boil. reduce to a simmer, cover and let cook for 10-15 minutes (i let it go for 15 minutes.)
while the quinoa is cooking, chop everything up.
in a small skillet, warm a littttle but of olive oil ( i used spray). add the onion and let cook on medium heat. after about 3 minutes add the red pepper. add spices as you like (if using fresh garlic add it in with the onion). add the celery, stir the veggies around and once the onions are cooked (clear), take the pan off the heat.
by now, the quinoa should be cooked. uncover and fluff with a fork. add the veggies from the skillet into the quinoa, add the black beans and lentils, and then continue to add spices/seasoning to taste. last step: add half the juice of the lemon and then a few splashes of soy sauce. this is definitely one of those recipes that you can’t mess up. just keep on tasting and adding as you go. you can also go crazy with you’re adding to this….basil would have been great in here, as well as chick peas. again, you can’t go wrong.
after the quinoa was done, i served it over half of a sweet potato and finished it with avocado on top.
the perfect all in one dinner.
