Mushroom, Asparagus and Pea Risotto

tonight i tried something NEVER DONE before in my kitchen – RISOTTO!

a recipe that for a while had intimidated me, i finally took it on tonight (also, i never knew vegan risotto existed. alas, IT DOES!)

it was, overall, fairly easy to make. the only tricky thing we found was the actual cooking of the risotto itself….for some reason we couldn’t get the rice to cook 100% through, so while we were hoping for a creamy melt in your mouth sort or thing, what we got wasn’t EXACTLY this. the taste overall though was DELICIOUS. the combination of all of the veggies together was perfect, the seasoning was right on — next time, we’ll have to figure out a way to cook the risotto better. maybe addmore vegetable broth? hm. must get to the bottom of this….any ideas?
