Brian made me dinner! Huzzah.
I came home from work last night to find THIS prepared. What a very pleasant surprise indeed.
He got the recipe from fat free vegan kitchen, but tweaked it slightly. He didn’t make the cheese sauce she describes – instead he used only vegan parmesan.
There was also garlic bread made (bread, olive oil, basil), and whole wheat linguine and tomato sauce that we ate with the eggplant.
Everything came out amazing, and according to Brian it was really easy to make. The bonus? Tt was HEALTHY. Whole wheat bread crumbs paired with the fact that this was made sans mozzarella made for a “not too bad for you” dinner.
