Sweet Potato Kugel – Passover

As promised, I bring you a Kosher for Passover vegan dish. This was (relatively) easy to make, it only contains about  5 ingredients and it’s made up primarily of the greatest food known to man kind: SWEET POTATOES.  The only semi annoying part of the prep for this recipe is the peeling and grating of everything….fortunately I had a strong burly man at hand who took care of this for me. Once this step is done, the rest is easy!

Warning: this recipe makes enough to feed a small army, so beware! After having made it (and seeing as I don’t want to eat this for the next 12 days), I would suggest halving the recipe. But anyway, here it is, regular size.

What You Need:

6 small sweet potatoes – peeled and grated

3 small apples, peeled and grated ( I used Red Delicious)

1 cup of matzah meal

1 cup of walnuts, chopped

1 cup raisins

2 tsp cinnamon

1 cup of water or juice ( I used water — wanted to avoided the added sugars….sweet ps are so sweet naturally. No need!)

What You Do:

Place everything into a mixing bowl. Mix, then pat into a baking dish (I used a lasagna dish). Pop in the oven at 375 degrees for 45 minutes (or until the top begins to crisp.) Tada! You’re all done.

    I tried this recipe and it tasted really good. But it didn’t stick together as I expected. You need to use a spoon, not a spatula and a fork. Can you suggest additional ingredients that would make it stick together?
